Stylist Renee Muller is a trailblazer in the food and lifestyle styling industry. Her cookbook “Our Table” cookbook debuted in 2016, setting the bar in cookbook food styling (since then, she's brought her style to many more books!). With her own European upbringing, she’s still getting accustomed to raising American-born kids (and the concept of takeout). Nice idea but I feel that it is quite wasteful.. ladling it out with a spoon the old fashioned way may take a few extra seconds but better for the environment.
Why take out the fat? After all Chicken soup is just water with animal fat with taste added by vegetables. I have a better idea. Use an extremely fine mesh sifter and pour all the soup thorough it after cooking. What happens then is basic kitchen science. The fat gets broken into tiny tiny little drops and thus emulsifies easily into the the rest of the liquid. That way your whole soup is richer in umami and there is no horrible globs of fat floating around.
so funny to see this my mother has been doing this for years but she does it a bit different.
She spreads a piece of saran wrap over the top of the soup BEFORE she puts it into the fridge. Once it gets cold all the fat sticks by itself to the plastic. she just carefully takes the plastic off the soup before she warms it back up.
