Potato Boreka Roll-Ups
 
Ingredients
  • 1 puff pastry sheet
  • Instant potatoes
  • Imagine Organic Chicken-Less Chicken Broth or Osem MSG-Free Chicken Consomme
  • Gefen Caramelized Onion Cubes
Instructions
  1. Preheat oven to 350ºF. Line a 9- x 13-inch baking pan with parchment paper. Place puff pastry sheet inside the pan.
  2. Prepare instant potatoes according to package directions, using chicken broth/stock instead of water (depending on the instructions, you will also likely need Earth Balance or margarine).
  3. Once potatoes are cool, mix in caramelized onions.
  4. Generously spread potato mixture over the puff pastry. Fold one side of the roll in towards the center. Fold the other side over the top. Using a fork, press to secure the two edges.
  5. Brush with beaten egg and sprinkle with sesame seeds. Bake, seam side down, for 30-45 minutes until puffy and golden brown.
