English Muffins
 
Ingredients
  • 4 cups flour
  • 1 ½ teaspoons salt
  • 1 ½ cups warm milk
  • 1 ½ teaspoons yeast
  • 1 tablespoon sugar
  • 1 tablespoon oil or melted butter
  • Semolina flour or cornmeal, for dusting
Instructions
  1. In a large bowl, mix together flour and salt.
  2. In a measuring cup or small bowl, combine milk, yeast, and sugar. Add oil.
  3. Make a well in the center of the flour and add in wet ingredients and knead until dough is smooth (you can also do this in an electric mixer). Cover with lightly greased plastic wrap and let rise in a warm place for 45-60 minutes.
  4. Roll out dough on a floured surface to ½-inch thick. Using a deep 3-inch cookie cutter, cut out rounds (I re-roll the scraps and try to get a couple more rounds). Dust rounds with semolina. Cover and let rise for another 20 minutes.
  5. Warm a griddle or large frying pan over medium heat. Spray griddle (away from the heat) with nonstick cooking spray. Add muffins and cook for 5-7 minutes on each side, until golden brown.
  6. Enjoy warm, or let cool first and split open and toast.
