Pesach Chocolate Cookies

- 1 ½ cups sugar
- 4 eggs
- 4 tablespoons oil
- ¼ tsp coffee dissolved in 1 tablespoon boiling water
- pinch salt
- ½ cup potato starch
- 4½ cups ground almonds
- 5 bars Noblesse chocolate, melted
- Preheat oven to 350⁰F.
- Combine all ingredients besides the melted chocolate and mix well. Add melted chocolate.
- Using wet hands or a cookie scoop, roll walnut sized balls and place on a lined baking sheet. Bake for 12 minutes.
