Praline Ice Cream Sandwiches
 
Ingredients
  • 1.5 cups heavy whipping cream*
  • 1 10.5 ounce jar of sweetened condensed milk*
  • ¼ praline paste (make sure to mix well as it can separate in the jar)
  • ¼ cup caramel spread, optional
  • 16 pizzelle cookies
  • Chopped pecans or hazelnuts, optional
  • (*If you have a 14 ounce can or jar of condensed milk, use 2 cups of heavy cream.)
Instructions
  1. Using an electric mixer (hand mixer is fine), whip the cream until stiff peaks form.
  2. Pour the condensed milk into a separate bowl. Fold the whipped cream into the condensed milk, mixing gently until combined.
  3. Add praline paste and mix gently, leaving ribbons of praline visible. Cover and freeze.
  4. When the ice cream is firm, assemble sandwiches. Pour chopped nuts on to a flat plate. Spread a very thin layer of caramel on each cookie. Scoop ice cream onto one cookie and cover with a second. Gently (pizzelles are very delicate - you might want to have extras on hand) press them together to flatten the ice cream. Roll the edges of the sandwich into the chopped nuts. Place assembled sandwiches on a sheet pan and freeze until firm. At this point you can transfer to an airtight container.
