Victoria’s Coconut-Date Energy Balls
 
Ingredients
  • 1 cup oats
  • 6 dates, chopped
  • ½ cup almond flour
  • ⅓ cup almond butter
  • 2 Tbsp grated coconut, plus more for coating
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • Pinch salt
Instructions
  1. First, combine oats and dates in a food processor. Pulse to combine. The oats and dates have to be fully blended before adding the rest of the ingredients.
  2. Add almond flour, almond butter, coconut, vanilla, maple syrup, and salt. Blend to combine.
  3. Form into balls and roll into additional coconut.
