Gluten Free Chocolate Chunk Cookies for Pesach

Ingredients
  • 1 c oil
  • 1 c brown sugar
  • ½ c sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 5 c almond flour
  • 1.5 tsp baking soda
  • 1 tsp kosher salt
  • 1-2 c chopped bittersweet chocolate (Tammy used a whole 10.5oz Alprose chocolate bar. You can also use chocolate chips.)
Instructions
  1. In a bowl, using a wooden spoon or spatula, mix oil with sugars and eggs until smooth. Add vanilla. Add almond flour, baking soda and salt. Once smooth, add in chocolate chunks.
  2. Scoop into 1.5 Tbsp sized balls. Roll and flatten slightly.
  3. Bake at 350 for 8 minutes.
