Moroccan Jeweled Couscous
Serves: 6 servings
 
Ingredients
  • 1 10oz package instant Moroccan couscous, cooked according to package instructions; definitely don’t skip the olive oil and you MUST add the salt if you want a well balanced final side dish.
  • 4 tbsp olive oil
  • 2 onions, sliced
  • ½ cup dried cranberries
  • ½ cup golden raisins
  • ½ cup toasted slivered almonds
  • 4 tbsp sugar
  • ½ tsp turmeric
  • Pinch of salt
  • Pinch saffron, optional but recommended
Instructions
  1. Heat olive oil in a frying pan over medium-low heat. Add onions and cook until soft, about 8 minutes.
  2. Add craisins, slivered almonds, golden raisins, sugar, turmeric, salt and saffron. Mix well and sauté until everything is caramelized, about 3 minutes.
  3. Combine with prepared couscous, breaking apart bigger chunks.
