1 10oz package instant Moroccan couscous, cooked according to package instructions; definitely don’t skip the olive oil and you MUST add the salt if you want a well balanced final side dish.
4 tbsp olive oil
2 onions, sliced
½ cup dried cranberries
½ cup golden raisins
½ cup toasted slivered almonds
4 tbsp sugar
½ tsp turmeric
Pinch of salt
Pinch saffron, optional but recommended
Instructions
Heat olive oil in a frying pan over medium-low heat. Add onions and cook until soft, about 8 minutes.
Add craisins, slivered almonds, golden raisins, sugar, turmeric, salt and saffron. Mix well and sauté until everything is caramelized, about 3 minutes.
Combine with prepared couscous, breaking apart bigger chunks.
