Skirt Steak Wraps with Guacamole
 
Ingredients
  • Skirt Steak Wraps with Guacamole
  • 1 (8 count) package of 6” wraps
  • 2-3 lbs skirt steak, soaked for 30 min to 1 hour in cold water
  • ½ teaspoon garlic powder
  • 2 yellow onions, sliced into half moons
  • ¼ cup oil, for frying
  • Store-bought guacamole (or make your own, Mash a ripe avocado, add some lime juice, finely diced jalapeño, garlic powder, and salt to taste.)
  • Store-bought Caesar dressing (or any creamy dressing of your choice)
Instructions
  1. In a saute pan, heat oil over low heat. Add onions and saute until nicely caramelized. Take your time and don’t rush them, we want golden onions, not burnt onions.
  2. Once your onions are almost ready to go (you can do this step earlier in the day too), preheat your outdoor grill or grill pan.
  3. Dry the skirt steak well, and pound down if desired, using a meat pounder or a glass bottle.
  4. Season steak with garlic powder (no need to salt, it’s salty enough) and grill/sear for about 5-7 minutes per side, depending on thickness of the meat. Remove from heat and let sit for a few minutes.
  5. While the meat rests, heat up your wraps either over an open flame, using tongs to turn, or in a frying pan. Wrap in a kitchen towel to keep warm and soft until using.
  6. Slice the skirt steak.
  7. To assemble: Spread some guac on a wrap, add skirt steak, and top with fried onions.
  8. Drizzle some Caesar dressing over the whole thing.
