Ingredients
  • Sausages & Veggies:
  • 3-4 Meat Mart sausages
  • 2 tablespoons oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon mustard
  • 2 garlic cloves, crushed
  • 1 medium zucchini, sliced
  • 1 large tomato, cubed
  • 1 bell pepper, sliced
  • 1 medium onion, cut into chunks
  • Salt and pepper
  • For serving:
  • Rice or mashed potatoes
Instructions
  1. Preheat oven to 425ºF.
  2. Slice sausages ½ thick on the diagonal.
  3. Mix oil, vinegar, mustard, garlic together. In a bowl, toss all the vegetables and sausages with the mixture. Spread in a single layer on a baking sheet. Season with salt and pepper. Bake for 20- 25 minutes. Serve with rice or mashed potatoes.
