Everyone loves an ice cream pop…but perhaps they’d be more fun if we could choose our flavor (beyond vanilla ice cream) and choose our topping (beyond a thin chocolate coating).
Get a pint of ice cream and make sure it’s frozen solid!
Cut off the container.
Insert 3-4 popsicle sticks, evenly spaced. The standard 3/8 sticks won’t work. Rather, you need the wider “jumbo” craft sticks.
Slice the ice cream between the sticks. Place on a parchment lined baking sheet and place in the freezer.
Meanwhile, melt your chocolate (we used dark and white) and choose your toppings (we used crushed Lotus cookies, crushed waffle cones, crushed peppermint candies, sliced almonds, pistachios, and sea salt). If you’re preparing multiple batches, only remove a few at a time from the freezer.
Once the ice cream is firm again, dip it in or drizzle with chocolate and sprinkle with toppings. Return to freezer until ready to serve.
