Although the ingredients are nothing unusual it yields a high & addictive pie. Dare we say one of the best Passover pies. My aunt has a non Jewish helper; she knows the family recipes better than my aunt and to make herself indispensable she doesn't give them out. If she does give a recipe out, something is always missing. When I called her for this recipe, it didn't seem right but after some memory digging and a couple of phone calls later, I assembled it the way it was supposed to be! Share it. Thats sweet revenge!
Ingredients
5Granny Smith apples
½cuppotato starch
5eggs
½cupoil
1cupsugar
¾tspcinnamon
1tspvanilla sugar
Topping:
1 ¾cupscoarsely chopped walnuts(not ground)
⅓ - ½cupsugar
Instructions
Preheat oven to 350°F.
Peel, core apples and slice into rings.
In a large mixing bowl, combine the potato starch, eggs, oil, sugar, cinnamon and vanilla. Add apples to the bowl and coat well.
Combine walnuts and sugar. Place half of the topping on the bottom of a round pan or pyrex. Layer apples neatly. Pour remaining egg mixture on top.
Let mixture settle into the apples the sprinkle with remaining topping.
Bake uncovered for 1 hour or until golden brown. If top browns too fast, cover with foil and continue to bake.
