Preheat oven to 350ºF. Line a baking sheet with parchment paper.
In the bowl of an electric mixer, cream eggs, sugars, vanilla, and oil together. Mix in the potato starch and ground almonds. Add chocolate chips and mix well.
With wet hands, form dough into 2 logs on prepared baking sheet. Bake for 25-30 minutes or until tops look crispy. Cut while warm.
