Orzo and Chicken Stir-Fry
Ingredients

oil

medium
onion,
diced
1
(12-oz) bag
orzo
2½
cups
water
½
tbsp
salt
½
tsp
black pepper
1
tsp
garlic powder
3
cups
chopped broccoli
2-3
cups
cooked chicken,
cubed
Instructions
Heat oil in a 4-quart pot. Sauté onion for 5-10 minutes, until brown and crispy.
Add orzo; toast 5 minutes until golden.
Add water and spices; bring to a boil. Simmer 10 minutes.
Stir in broccoli and chicken. Cook another 10 minutes, stirring frequently, until almost all water is absorbed.
Turn off heat. Let sit 5 minutes before serving.
