Prepare the Sweet and Sticky Onions. Heat oil in a sauté pan over medium heat. Add onions and sauté until soft and starting to brown. Add salt, duck sauce, and sweet chili sauce.
Prepare the Russian Dressing. In a bowl or container, combine all ingredients.
Prepare the Crispy Pastrami. Preheat oven to 350°F. Spread pastrami on a parchment-lined baking sheet. Sprinkle with brown sugar. Bake for 8-10 minutes, until the sugar is dissolved.
Assemble the sandwich. Cut the baguette in half. Smear both sides with Russian dressing. Top one side with lettuce, avocado, pastrami, chicken, and onions. Cover with second half of the bread. Stick in skewers (so that there will be one skewer in each portion once sliced) and slice into portions. Enjoy!
