Romaine, Apple, and Fennel Salad

Ingredients

oz.
chopped Romaine lettuce
1 apple, thinly sliced
1 fennel bulb, thinly sliced
¼ red onion, thinly sliced
Honey Mustard Dressing:
juice of 2 limes

olive oil

tbsp
lite mayonnaise

tsp
whole grain or “old style” Dijon mustard
(the kind with the little brown balls)

tbsp
maple syrup or honey
½
tsp
salt
pinch of black pepper
¼
tsp
dried parsley
Topping:
¼
cup
grated parmesan cheese
Instructions
Whisk together all dressing ingredients.
Add all salad ingredients to a bowl. Toss with dressing, add parmesan cheese as a topping and enjoy.
