Prepare the aioli. Blend all ingredients together in a food processor or in a container using an immersion blender.
Prepare the guacamole. Combine all ingredients in a large bowl and mash using a potato masher. Don’t over mash. Taste and adjust salt if needed.
To assemble the toast, spread hot sourdough toast with aioli. Spread with guacamole. Sprinkle with feta cheese, red pepper flakes, and alfalfa sprouts and drizzle with olive oil. Top with a sunny-side up egg and enjoy!
