Elegant Chicken with Green Beans and Roasted Peppers
Ingredients
For the chicken:
4-6chicken pieces(whichever pieces your family prefers)
½tspsalt
½tspgarlic powder
½tsppaprika
dash of pepper
drizzle of honey
For the vegetables over the chicken:
2tbspolive oil
1onion,sliced thinly
2garlic cloves,minced
1red bell pepper,sliced
¼tspsalt
¼tspgarlic powder
¼tsppaprika
½tspturmeric powder
dash of pepper
1tbsphoney
6-7ozFrench green beans
Instructions
Preheat the oven to 350°F.
Place the chicken pieces in a pan. Sprinkle with spices and a drizzle of honey. Cover tightly and bake for 1 ½ hours.
Meanwhile, prepare the vegetables that will go over the chicken. Heat olive oil in a sauté pan over medium heat. Add onion and sauté until golden and starting to caramelize. Add garlic. Add pepper strips and continue cooking, stirring from time to time. Season with the salt, garlic powder, paprika, turmeric and pepper. Stir and add honey. Add green beans and cook for 4-5 minutes. You want the green beans to still be firm.
Remove chicken from the oven and uncover. Top with the vegetables and return to the oven until ready to serve. On Shabbos or Yom Tov, leave the pan in the oven on low temperature to heat up until ready to serve.
