Elegant Chicken With Green Beans and Roasted Peppers

This chicken dish is so pretty to bring to the table, and even more so, it’s delicious

Sisters spend lots of time on the phone, sharing news, sharing laughs and sharing…recipes. My sister Esti told me she had this chicken recipe that she prepares very often for Shabbos, and I knew I had to try it. 

It did not disappoint–and as a bonus, it looked so pretty and elegant on the table. That’s very unlike my usual chicken dishes, if I might add.

Place the chicken pieces in a pan. Sprinkle with spices and a drizzle of honey. Cover tightly and bake for 1 ½ hours.

Meanwhile, prepare the vegetables that will go over the chicken.

Sauté the onion until golden and starting to caramelize, then add the garlic and red pepper.

The green beans, spices, and honey go last. You want the green beans to only cook for 4-5 minutes and still be bright green and firm.

Remove chicken from the oven and uncover. Top with the vegetables and return to the oven until ready to serve.

On Shabbos or Yom Tov, leave the pan in the oven on low temperature to heat up until ready to serve.

Elegant Chicken with Green Beans and Roasted Peppers

Ingredients

For the chicken:

  • 4-6 chicken pieces (whichever pieces your family prefers)
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp paprika
  • dash of pepper
  • drizzle of honey

For the vegetables over the chicken:

  • 2 tbsp olive oil
  • 1 onion, sliced thinly
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ½ tsp turmeric powder
  • dash of pepper
  • 1 tbsp honey
  • 6-7 oz French green beans

Instructions

  • Preheat the oven to 350°F.
  • Place the chicken pieces in a pan. Sprinkle with spices and a drizzle of honey. Cover tightly and bake for 1 ½ hours.
  • Meanwhile, prepare the vegetables that will go over the chicken. Heat olive oil in a sauté pan over medium heat. Add onion and sauté until golden and starting to caramelize. Add garlic. Add pepper strips and continue cooking, stirring from time to time. Season with the salt, garlic powder, paprika, turmeric and pepper. Stir and add honey. Add green beans and cook for 4-5 minutes. You want the green beans to still be firm.
  • Remove chicken from the oven and uncover. Top with the vegetables and return to the oven until ready to serve. On Shabbos or Yom Tov, leave the pan in the oven on low temperature to heat up until ready to serve.

    Did anyone try this with cutlets?

    I made this with cutlets- I coated them with flour and sprayed them with cooking spray, then spices and honey. Then did half hour covered and then half hour uncovered with the vegetables. It came out delicious!!!

    This is the tastiest chicken I’ve ever eaten — and I’m not even usually a chicken lover! The green beans give the chicken an incredible flavor, and cooking it low and slow for several hours makes it buttery soft and tender. I’ll definitely be making this again soon.
