How to Keep Grated Potatoes from Turning Brown

Now you can grate potatoes in advance for kugel and yapchik and they’ll stay white!

For the times that Pesach leads right into Shabbos, I needed to come up with a way to have my potatoes grated in advance for this Yapchik. Previously, if I left grated potatoes in the fridge for more than an hour they would turn black.

So, I called my mother and she shared this hack:


Store grated potatoes in a container.


Cover with oil to seal in the air.


Then cover tight.

This will protect the potatoes from turning brown (or black!).


There will be a layer on top that will discolor, just scoop it off and the rest is ready to use.

    Only the grated potatoes. Or the whole mixture can be ready in the container? And oil has to be hot or not?

        I heard from someone to make the whole mixture. Place in a jar. Pour in hot oil, and shake very well. Then fridge till use. I don’t wanna do it that way. So I asked here. Pointing it out if someone wants to do it that way. For me it’s better grated pot only. And thats also why I asked if oil be hot. Thanks for reply.

      You can spill some of it off and then use the potatoes.

      I don’t, Theres a thin black layer that forms on top, when i scoop that off, it removes most of the oil as well.

    I do the whole mixture in a ball jar, I place a paper towel on top of the mixture then I seal the jar. When I’m ready to use I remove the paper towel and the top gets a little brown which I remove and it’s ready to be cooked!

    So smart! Our hack is a teaspoon of vitamin C powder for about 5lbs of potatoes (it’s not a scientific amount but don’t put in too much). We made a latke mixture on the first day of Chanukah and were still able to use it on the last night. The top layer was a little black but besides for that, it works like a charm!

    Vitamin C works well.
    The only thing that has been foolproof for us is rinsing the shredded potatoes in a strainer. Rinse until the water runs clear. Drain and use or set aside.

    I grate an onion first, then the potatoes in the same bowl (no rinsing in between), but I haven’t tried storing overnight.
