Magic Spice Salmon

The salmon hack that’s perfect for when you want to get out of the kitchen quick.

It was a Thursday afternoon and Victoria and Renee both happened to land at the fish counter at Seasons Supermarket at the same time.

Also there was Victoria’s neighbor, Syma, and she was holding this piece of salmon. She explained that even when she’s not serving a whole side, but just a pound or two, she likes cooking and serving it in one piece because it simply stays juicier. 

That made sense. But, because part of our job here at Between Carpools is to ask everyone and anyone how they prepare their [insert any protein here!], we also asked Syma how she’s going to prepare hers.

First, she admitted that she does not like being in the kitchen! We told her, “That’s absolutely perfect. Because we need those easy cooking hacks from people like you!”

Start by spraying your salmon with cooking spray, avocado spray is recommended. This will let the seasoning stick. Then, simply sprinkle on this Magic Salmon Seasoning.

For a piece like this, or a larger side, bake at 500°F 15 minutes (the parchment paper will brown a bit but it won’t burn). Then shut off the oven and leave the fish in the hot oven for another 15 minutes to let it finish cooking gently.

Syma told us she learned this hack from her friend Rivky Wallerstein. When we called Rivky for more info, she shared that she does the same thing with individual slices, baking for just 5 minutes, then shutting the oven and leaving it there for 15 minutes as well. She warned that this cooking technique is not recommended for salmon recipes that have a nut crust or sugary toppings, as they’ll burn. But it’s perfect for fish seasoned with spice rubs like this.

That’s when you’ll get the perfect amount of crispiness on the outside without getting overdone or dry.

For the easiest way to transfer larger pieces of salmon or any fish without it falling apart, we use a fish spatula like this.

Magic Spice Salmon

Ingredients

  • 1 (1 ½ – 2 lb) salmon fillet, whole
  • avocado cooking spray
  • Magic Salmon Seasoning

Instructions

  • Preheat oven to 500°F.
  • Line a baking sheet with parchment paper. Add salmon to baking tray.
  • Spray with cooking spray. Sprinkle generously with Magic Salmon Seasoning. Bake/Broil for 15 minutes. Turn off oven and leave salmon in the oven for an additional 15 minutes.
  • If using salmon slices, bake for only 5 minutes, then leave in off oven for 15 minutes.

Notes

    Can’t wait to try this technique. The magic fish seasoning is also delicious. Sometimes I mix the salmon and fish seasonings.

    I do the same thing with the oil spray and salmon spice. As soon as I take it out of the oven, I smear a little bit of duck sauce over the whole salmon.

    I also like to cook on high heat for shorter time. As soon as I remove from oven I cover with foil so it stays moist and doesnt dry out.

    i have one issue, when slicing such a side of salmon, it falls apart. how do you serve it nicely?

    I do the same thing with a Trader Joes’s spice, it’s called “everything but the bagel” This is what is in it.
    SESAME SEEDS
    SEA SALT FLAKES
    DRIED MINCED GARLIC
    DRIED MINCED ONION
    BLACK SESAME SEEDS
    POPPY SEEDS
    Trader Joe’s also carries a spice called “Salmon Rub”

    The method is fantastic but I personally found that this spice has not my taste! I found the mustard seed very overpowering and frankly not somwthing I enjoyed… but the method is the “magic” and I will surely make this again but definitely with a different salmon rub (there are so many available in the grocery stores)!

    Another great option is McCormock cedar plank salmon seasoning. Delicious smoky flavor!

    Hi there! Baking on high heat is so delicious—that’s actually whyI make my Shabbos fish in the Betty Crocker.
    I cook it on high heat for 8 minutes, then let it sit for another 8 minutes. After that, we put it straight into the fridge, covered, so it “sweats” and becomes super soft and juicy.
    The recipe we use is simple: minced onion, minced garlic, salt, hot pepper flakes, and a little olive oil.

    I do this with Rivky Kleiman’s chili lime spice mix or Trader Joes Salmon Rub. Both delicious. I like mine baked on 400 degrees for 20 minutes.
