How to make the best avocado toast with garlic aioli and guacamole.

Originally, The Cookie Corner was just a bakery–but there was a point when we wanted to add café-style items to the menu, including sandwiches and salads.
And, specifically, sourdough toasts.
This was the Avocado Toast that started it all–it took off so well that we ended up creating a whole café! It’s still the most popular item on the menu today.
Some say it’s the best avocado toast.

Start with a nice thick slice of freshly toasted sourdough.

Spread with garlic aioli.

Then the guacamole.

Now come the little touches (that we think make a big difference). Sprinkle your avocado toast with feta cheese.

And just the right dash of red pepper flakes.

Top with alfalfa sprouts and drizzle with olive oil.

Lastly, top with a sunny-side up egg (the secret to a great sunny-side up egg? Start with a screeching hot pot!).

The Cookie Corner Avocado Toast
Ingredients
Aioli:
- 4 garlic cloves
- 2 tbsp lemon juice
- 2 tbsp + 2 tsp water
- 2 tbsp duck sauce
- ½ tsp basil
- 2 ½ tsp deli mustard
- 2 cups mayonnaise
Guacamole:
- 5 avocados
- 15 g onion powder
- 15 g garlic powder
- 40 g lemon juice
- pinch of salt
For Assembly:
- sourdough toast
- crumbled feta cheese
- red pepper flakes
- alfalfa sprouts
- olive oil, for drizzling
- sunny side up egg
Instructions
- Prepare the aioli. Blend all ingredients together in a food processor or in a container using an immersion blender.
- Prepare the guacamole. Combine all ingredients in a large bowl and mash using a potato masher. Don’t over mash. Taste and adjust salt if needed.
- To assemble the toast, spread hot sourdough toast with aioli. Spread with guacamole. Sprinkle with feta cheese, red pepper flakes, and alfalfa sprouts and drizzle with olive oil. Top with a sunny-side up egg and enjoy!

what can I use the extra Aioli for? It makes a lot
Firstly it stays fresh in the fridge forever!
Secondly use this on everything-
I put in on salmon- before and after baking, it’s yum! Can work on meats, wraps…literally the best thing to have in your fridge!
