Sweet + Sour = Perfect Together in this refreshing perfect-for-spring Mango Salad with Silan and Lime dressing.
This salad will give you an excuse to always keep silan in your pantry and fresh limes in your fridge.

Frankly, I make this mango salad using whatever produce I have available…the only constant so far has been the mangos. The first few times, I included avocado but not the citrus…

one time I threw in hearts of palm. One time I was missing craisins and another time nuts.

There are lots of combinations that can benefit from the lip-smacking dressing that results from the sweetness of silan and the perfect tartness of fresh lime.

Make it your own and enjoy.
Mango Salad with Silan and Lime Dressing
Ingredients
- 5 ounces arugula, spinach, baby kale, or mixed greens (or just Romaine!)
- 2 mangos, diced
- 1 orange, supremed and diced
- 2 Persian cucumbers, diced
- 1 handful Craisins
- 1 handful sliced almonds
Dressing:
- 2 tbsp silan
- 2 limes, juiced
- 1 garlic clove, crushed
- 1 tsp salt
- pinch coarse black pepper
- 1-2 tbsp olive oil
Instructions
- In a large bowl, combine greens, mangos, orange, and cucumbers.
- You can whisk the dressing ingredients separately and toss with salad, or simply drizzle all the dressing ingredients over the greens and toss. Top with Craisins and almonds and enjoy.
