What do you do with all the babka you receive on Purim, or just which what was leftover from the previous Shabbos? It becomes the next great dessert.
There have been other babka-inspired desserts here on Between Carpools. In the past, we’ve shown you how to make Babka Spring Rolls. Come Chanukah, these easy Babka Donuts are a winner.

Now we’re going to make Babka Ice Cream, because it’s simply a great dessert you can whip up fast with just 2 ingredients: the babka that you already have on hand (or buy a piece if you like!) + ice cream.
It’s also great when you need a last minute dessert—fast.

There is no set amount of babka that you need. We used ½ of this round babka or 6 buns.

Cut the babka into croutons-sized pieces. If it’s already dried out, there is no need to toast it. But if your babka is fresh, toast the croutons by placing on a baking sheet and bake at 375℉ for 7-8 minutes. Mix babka croutons into a carton of semi-defrosted vanilla ice cream.

There you go. It’s so much more than ice cream. Refreeze.

Serve scoops plain as is, or topped with chocolate sauce.
