We thought this was a passing trend. Until we tasted them. These are our favorite Energy/Protein Balls.
I keep these in the freezer, my kids take them to go, and I’m thrilled they’re having something healthy and filling (they also think this is a treat). And I really enjoy them too.
Ok, let’s make these energy balls!
For the brownie energy balls, you can just throw all the ingredients into the food processor.
Blend
and blend.
This mixture needs to chill for a bit before being rolled into balls.
For the date-coconut balls, the oats and dates go in first.
Those need to be blended together completely before adding the rest of the ingredients.
Add almond flour, almond butter, coconut, vanilla, maple syrup, and salt.
Blend to combine.
Beauties.
Leave them plain or roll them in coconut (or flax, or chia seeds, or whichever coating you like). Keep them frozen until ready to grab!
- 1 ½ cup old fashioned oats
- ¼ cup almond butter
- ¼ cup powdered almond butter (PB2 brand)
- ¼ cup honey
- 3 tablespoons cocoa powder
- ½ tsp vanilla extract
- ¾ cup flax seeds
- 3 tablespoons hemp seeds
- ⅓ - ½ cup cold water
- Blend all together in a food processor.
- Place in fridge for 1 hour. This mixture needs to chill for a bit before being rolled into balls.
- Using damp hands, form into 30 small balls. Keep frozen.
- 1 cup oats
- 6 dates, chopped
- ½ cup almond flour
- ⅓ cup almond butter
- 2 Tbsp grated coconut, plus more for coating
- 1 teaspoon vanilla extract
- 3 tablespoons maple syrup
- Pinch salt
- First, combine oats and dates in a food processor. Pulse to combine. The oats and dates have to be fully blended before adding the rest of the ingredients.
- Add almond flour, almond butter, coconut, vanilla, maple syrup, and salt. Blend to combine.
- Form into balls and roll into additional coconut.
