This simple spice rub has so many uses–make a big batch and use it all Pesach long…and all year round.
I originally used this Coffee Spice Rub on this Seder Night Flanken. But then, I realized, once I had this spice rub mixed and ready, it became useful for so, so many other things. It really became the magic go-to to flavor almost anything, both on Pesach and all year round.

It’s the rub I use to season the Cowboy Steaks in Best of Kosher.
Or, use it with some olive oil to flavor grilled chicken.
It even works on salmon: spice rub + salt + fresh lime + bake!

You can also use it as a shortcut to prepare other BCP favorites like this Oven Smoked Brisket. Skip the other ingredients. Just throw on the spice rub and bake according to instructions. You might want to double or triple (or quadruple) the recipe below.

All Purpose Coffee Spice Rub
Ingredients
- 4 tbsp instant coffee (dry granules)
- 4 tbsp sugar
- 4 tbsp kosher salt
- 2 tbsp black pepper
- 4 tbsp paprika
- 4 tsp onion powder
- 4 tsp garlic powder
Instructions
- Combine all ingredients and rub on meat, chicken, or fish before baking. Can be used with or without oil.

Only used first 4 ingredients, was divine!
