The most refreshing salad includes ingredients you might not have thought to put together–but the combination of avocado, grapefruit, and feta is so refreshingly good.
This recipe was shared by our friends at Lettuce Eat Fresh — known for their uniquely curated salads available in NY, NJ, and Israel.
The Avocado Grapefruit has been a longtime BCP favorite–and we were so excited when we asked for the recipe, and they said yes!
When you enjoy something–it’s always a great feeling to enable others to enjoy too! This will be the salad that gets polished off at your dairy Chanukah party.
Note that it’s a big recipe, so feel free to divide in half, although we did finish this for lunch after preparing it for the photoshoot.

Avocado and grapefruit just get each other. Fresh, tangy, and perfectly balanced, this salad brings together bright citrus, smooth avocado, and a touch of feta for a mix that just works.

First things first–it’s important to know the right way to cut the grapefruit. It’s called “supreming” and it’s the best way to enjoy any grapefruit and even oranges. When cutting grapefruit, it’s important that you don’t include the white bitter parts. Simply peel it with a knife and cut the segments out from between the white lining.

You’re left with these gorgeous pieces of grapefruit with all the bright tart flavor and not the bitterness.

If your quinoa is already cooked, the salad will now take just a couple of minutes assemble. Add your greens, grapefruit, and quinoa to your salad bowl.

Add your avocado, then grate your feta cheese directly on top (sure, you can crumble it, but shredded/grated is so much prettier!)

That’s it–whisk the simple dressing ingredients together and you’re set.

You might not want to toss it because it’s so pretty.

But you will have to eventually!

Everyone will want a taste of something healthy that may outshine all the fried foods.
