For sure! When I skin chicken, I save the skin in ziplocs, portioned out, and freeze, and then toss that into the soup too. Adds tons of flavor.

The chicken is never really fresh. Fresh would be right after shechting and Kashering. At the end of the day your “fresh” is really a dead chicken.
You can often buy chicken that was not yet frozen, that is what is meant by “fresh”. Many say you can’t compare.

I recently started doing the same. And then I use the turkey to make pulled turkey with bbq sauce. Its so easy to pull apart. Is almost as good as pulled beef. Family loves it.
Sometimes I specifically buy a whole chicken, cut it into portions and then do the same thing with all the bones and leftover pieces. Makes the chicken soup heavenly!

I also do this with vegetables. When I have too many carrots or parsnips or other soup vegetables I prep them, blanch them and pack in small bags ready to toss into a soup. Lightening the load when I make soup.
