Something you can turn to over and over? This is the marinade you’re looking for.
- ¼ cup olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp sugar
- ½ tsp onion powder
- Pinch paprika (regular or smoked)
- ½ tsp each oregano, basil, rosemary and thyme
- ¾ tsp kosher salt
- ¼ tsp black pepper
- Whisk together and pour over chicken cutlets in a Ziploc bag. Let marinate at least 30 minutes. Grill over medium high heat for 3-4 minutes per side. Allow to rest 5 minutes before serving/slicing.

I find that when I grill chicken with any sauce or marinade on it as opposed to just spices, the excess burns in the grill pan around the chicken. Any tips?
Grill indirectly. (Meaning not directly above the flame). It’ll allow the chicken to cook without scorching. It sounds like the sugar components in your grilled marinades are what’s burning. Sugar always gets burned if it’s placed on the open flame too long.
