Mini Chicken Pitas

A wholesome, kid-friendly dinner is so easy to prepare when you have Pinch spice rub on hand.

When you have good flavor in a bottle, it almost negates the need for any kind of recipe. It’s just flavor that’s instant and easy. That’s what we learned when we tried Pinch’s King Salmon Rub in our Salmon Fish n’ Chips dinner featured here. The simple combination of perfectly spiced salmon, guacamole, and chips was a welcome, wholesome, and refreshing meal.

Now we’re going to use Pinch Busy Chicken Blend (isn’t the name perfect?) to make an easy, flavorful dinner that will please kids and adults alike.

Some groceries sell chicken already cut into these small, “stir fry-sized” pieces. It’s not nuggets but not ground chicken either. Just cute, bite sized pieces. If your grocery does not have this option, get out your knife, but besides for chopping an onion, it’ll almost be the only work needed for this dinner.

Start by sautéing an onion. Once it’s soft, add the Busy Chicken Blend.

Sauté for one more minute until you smell the Pinch aromas!

Add the chicken and mix. Cook until chicken is cooked through.

This will not take long as the chicken pieces are small. Looks yum! That is ALL there is to it.

We’re just about done! Stuff chicken into pitas and enjoy with Israeli salad and your favorite garlic mayo. (Some pickles may be in order here too.)

Mini Chicken Pitas

Ingredients

  • 1 lb chicken cutlets, cut into small “stir-fry” pieces
  • 2 tbsp olive oil
  • 1 large Spanish onion, chopped
  • 1 tsp salt
  • 2 tbsp Pinch Busy Chicken Blend

For Serving:

  • pita bread
  • Israeli salad
  • garlic mayo dip

Instructions

  • Heat olive oil in a sauté pan over medium heat. Add onion and cook until translucent, 5-7 minutes. Add salt and Pinch Busy Chicken Blend and stir to combine.   
  • Cook spices with onion for 1 more minute, until fragrant. Add chicken and mix, until chicken is white and cooked through.   
  • Stuff chicken into pitas and enjoy immediately, on their own or with Israeli salad and a garlic mayo dip.

    and if you live in Israel and are not able to get the blend? what would you use instead?

      Use any spices you like – schawarma, Italian spices, salt/pepper/garlic powder/paprika – literally anything works with chicken and sauteed onions.

    Hack I learned from Rena Tuchinsky, stuff the cut part of the pita in the bottom of the pita and that will help prevent tears or anything from soaking through
