These crackers use a lot of active starter, also known as discard. But, there is no flour added! All of the flour you need is in the active starter.
We found these crackers to be more chewy than the Classic Sourdough Crackers featured here, but in a satisfying way. For more uses for sourdough discard, see this post!
Unlike the Classic Sourdough Crackers, which can be prepared using either active or inactive starter, this one is perfect for after that starter is active and you have lots extra. Or, plan ahead and prepare extra starter so you can bake them special!

Add discard to a large bowl. You’ll need a lot of it, so save this recipe for when you have lots of extra and want to make good use of it!

Add olive oil and salt.

Whisk well to combine. The batter should be smooth without any visible oiliness. Use a whisk or a spatula.

Line a baking with parchment paper. Spread the batter out to the edges of the pan in a smooth even layer. An offset spatula will help you with this step.

Sprinkle the top of the batter with the sesame seeds. The more sesame seeds, the better!

Bake for 30 minutes. After 30 minutes, remove the pan and use a pizza cutter or a sharp knife to score the batter into cracker-sized squares. (Alternatively, you can skip this step and break the crackers when fully cooked.) Return baking sheet to the oven and continue baking for 30 additional minutes.

Remove the baked crackers from the oven and allow them to cool completely before breaking them along the scored lines.

Enjoy!
