Is it someone’s birthday today? Plan a mini celebration in five minutes with this adorable birthday cake.
Often, there may be a birthday in the family, but you really didn’t plan anything for that day in particular. Sometimes, you need just that little special item to make your child (or even an adult) feel special. You don’t always need a big cake that’ll feed lots of people. It’s at those times that something small but meaningful will do.
In the past, we’ve shared some great birthday cake ideas, like these Birthday Cake Hacks. This is another way to Fake a Super Cute Birthday Cake using a store-bought Bundt (or, feel free to bake it). These Fillable Letters with candy are a great sub for a birthday cake. Finally, if you do want to create something special, these Ice Cream Treat Logs made with Rice Krispies or Fruity Pebbles will be a big hit.
This one is cuter (and quicker!) than ‘em all.
When one BCP reader Yachy Reich shared this idea that was inspired by her sister, we loved it! It takes minutes, it’s cost-effective, and the results are so, so adorable.
All you’ll need is one pint of ice cream. You can really decorate however you like!
But first, use a scissor to cut open the pint of ice cream so that you keep the ice cream inside intact. The ice cream should be straight out of the freezer and rock solid at this point.
We sliced off some of the bottom because there was an air pocket that would have made the top of our cake uneven.
Now we have the inside of our cake! The bottom of the pint of ice cream is now the top.
Time to decorate! We used some Pure Foods by Estee Sprinkles to coat our entire ice cream cake (a little bit more involved), but you can be as creative as you like (i.e. even a drizzle of chocolate syrup, caramel, and some sprinkles or chocolate crunch works!). Return it to the freezer right away so it firms back up!
Just add some whipped cream before serving and you have a great cake!
Happy Birthday!

my grandmother showed me a similar hack many years ago with a full tub of ice cream. She peeled off the cardboard and sliced it in half. She stuck one half in the freezer and cut the half in half again – stuffed it with sandwich cookies and placed the half on top it. Then she decorated it. She decorated the other half in the freezer after she was done with the first half. We loved it!!!
