The Har Sinai Ice Cream Cake

If there’s one dessert you will make for your children this Shavuos, this ice cream cake is it.

It was at our Between Carpools Shavuos planning meeting that this brainstorm came about. We knew we wanted to include a Har Sinai cake. But what? It had to be cute. And easy and fun to prepare. It had to be exciting for the kids. And not too gimmicky.

Then, one of us said, “Why don’t we adapt the Mini Birthday Cake concept and make a Har Sinai version?” 

We didn’t realize at the time how cute and perfect it would actually be. Super cute. Super easy. And super perfect.

This time, instead of using a pint of ice cream, we’re going to use the larger Half Gallon. Fill a 9×13 inch baking pan (or any pan) with green sprinkles (available in most kosher grocery stores). Cut away the container (make sure you do this straight out of the freezer–don’t give it any time to get soft).

Then, carefully, coat the ice cream in the sprinkles.

Now you have a lush green mountain! Return the ice cream to the freezer. 

Time to decorate. The instructions for this Torah at the top of the cake are from this post on Torah treats you can make with your kids. It uses tea biscuits with chocolate spread (or chocolate topped tea biscuits), wafer rolls, and sprinkles. 

Keep the Torah scrolls in freezer until you’re serving the cake.

Two toothpicks in the cake are inserted into the wafer rolls, and that holds the Torah upright. 

To make these adorable flowers, you’ll need large marshmallows and Dum Dum Lollipops.

Spray the scissors with cooking spray and cut the marshmallows into “petals.”

Burn the edge of the marshmallows just a bit so they get a little melty. 

Rather than a match, this is actually easier to do if you use a tealight (then you can do a couple of petals at a time).

Affix the metals to the Dum Dum right away and it’ll stick! Like with the Torah, you’ll want to keep these flowers in the freezer until serving and add them to the cake right before.

Press the flowers into the cake. 

How exciting is this!

* Note: If your local grocery is out or if you have no access to green sprinkles, you can use chocolate sprinkles; works well too… Har Sinai is a mountain.

        Pride of the farm really is the best. The only thing is that it comes in a plastic tub that might be harder to cut away.
