Searching Forever for Great Whole Wheat Muffins? Found.

Do you need perfectly easy and delicious muffins that your kids will eat and request again and again?

Some mornings you just want to be that iconic Mama, with the apron tied on and the piping hot tray of hot muffins in your hands. Healthy and completely homemade muffins, of course, I shall add. Well, guess what, you could be that Mother.

This recipe is so easy and so quick, and your house will smell delicious and inviting in no time.

These muffins are the perfect substitution for a breakfast on the go or a midmorning snack. In our house, I find it crucial to keep the freezer stocked with whole grain muffins. That way my teenage girls and even my little ones can grab a quick breakfast (zapped in the microwave) when they’re running for the bus. And even when they’re running on time, they take them as a filling snack (or lunch) for later in the day. I like to place them in individual bags and freeze them so that they are literally grab and go.

P.S. I find myself doubling and tripling the recipe all the time. That good.

My Favorite Whole Wheat Oat Muffin

Servings: 12 muffins

Ingredients

  • 1 cup white whole wheat flour
  • 1 cup quick oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup applesauce
  • ½ cup honey
  • 1 egg
  • cup oil
  • 1 tsp vanilla
  • ½ cups chocolate chips

Instructions

  • Preheat oven to 350°F. Grease a muffin pan with nonstick cooking spray, or line with cupcake liners.
  • Combine flour, oats, cinnamon, baking powder, baking soda, and salt. Add applesauce, honey, egg, oil, and vanilla. Mix well. Stir in chocolate chips.
  • Pour batter into muffin pan and bake for 20 minutes.

      The applesauce replaces the oil and sweeter, but not sure how much to adjust.

    I usually triple the recipe and use 1 cup honey and 2 cups applesauce. I have also replaced the chocolate chips with frozen blueberries.

    I make these all the time! The best healthy muffins. I have substituted almond flour, and various other ingredients and it always comes out great. My favorite add ins are white chocolate chips and chopped almonds.

    Firstly, thanks for this recipe! These are amazing and I make them all the time! Kids and husband love them! So easy to grab in the morning as a quick breakfast or a snack. Secondly, I have a great hack for this and it’s saved me so much cleaning time and prep time!! If you use the individually packed cups of applesauce (pack of 6), – they are exactly a half a cup!! After using one for the apple sauce part of the recipe , you can use it for the honey and then chocolate chips. Saves you cleaning and also helps you get all the honey out as the applesauce remnants prevent it from sticking.

    We love these! I made these egg free and used a few other subs based on what I had at home. We make them all the time now.
    Subs: regular whole wheat flour, sprouted rolled oats, maple syrup instead of honey, and a flax egg. So yum!
    My sister in law made them with raisins instead of chocolate to keep her baby clean 🙂
