A cross between a cookie and a bark, it’s a simple, no-fuss recipe that lives in the freezer and comes out whenever you invite it. Always ready, always delicious!”

Cookie Dough Bark
Ingredients
- 1 ½ cups Rorie’s Grain-Free Flour or extra-fine almond flour
- ¼ cup melted coconut oil
- ¼ – ⅓ cup pure maple syrup
- ½ tsp pure vanilla extract
- 1 ½ cups 50-72% chocolate chips, divided
- Maldon salt, for garnish (optional)
Instructions
- Line a baking sheet with parchment paper. Set aside.
- In a large bowl, mix together flour, oil, maple syrup, and vanilla until smooth.
- Fold in ½ cup chocolate chips.
- Place cookie dough on prepared baking sheet; spread over the baking sheet, using your hands to form a thin layer. Freeze for 5-10 minutes.
- While dough chills, melt remaining chocolate chips in a double boiler or microwave.
- Pour melted chocolate across the dough. Top with Maldon salt, if desired. Return to freezer for at least 1 hour.
- Cut into pieces and enjoy!

can i use canola instead of coconut?
margarine would probably be a more similar sub
I was excited about the simplicity, but disappointed to see the ingredients were items most people don’t have and things that are very expensive.
Agree, disappointing. I don’t own these ingredients or plan to buy them either. But this wasn’t meant as a regular BCP recipe, it’s from Rorie’s new cookbook (being promoted here) which uses all these more healthful subs in cooking and baking.
I’d love a non-healthy version though! This looks delicious.
You can find plenty of recipes online for regular edible cookie dough. This one is meant to be high protein and better for you. Exactly the kind of recipe lots of health concious people want. Thank you BCP for choosing this recipe to feature- now I want the cookbook!

could it work with spelt flour or is the almond flour needed for texture?

Almond flour can be eaten raw vs spelt four ppl wouldnt eat without baking.

As someone who is off white flour and sugar I’m excited to try this. I need more easy to make recipes. The chocolate chips always trip me up though- either I have to make homemade chocolate (which I have done) or use nuts instead

Easy and addictive! I was worried that the coconut oil would make it taste like coconut but it doesn’t at all. Delicious!
you can use pascha choc chips- no sugar.
