Gluten Free Cookie Dough Bark

It’s just five ingredients and so simple, you can even bake it last minute on a Friday. Plus, it’s wholesome so you can feel good about this treat too.

Editor’s Note: When deciding what recipe to feature from Rorie Weisberg’s newest book, written in collaboration with the talented Sara Goldstein of @tomatoestomatoes, More Food You Love That Loves You Back, our first question was, “What would our readers love?” It was hard to choose! But this recipe, with its few ingredients, and ease of prep won us over.

Cookie Dough Bark

Ingredients

  • 1 ½ cups Rorie’s Grain-Free Flour or extra-fine almond flour
  • ¼ cup melted coconut oil
  • ¼ – ⅓ cup pure maple syrup
  • ½ tsp pure vanilla extract
  • 1 ½ cups 50-72% chocolate chips, divided
  • Maldon salt, for garnish (optional)

Instructions

  • Line a baking sheet with parchment paper. Set aside.
  • In a large bowl, mix together flour, oil, maple syrup, and vanilla until smooth.
  • Fold in ½ cup chocolate chips.
  • Place cookie dough on prepared baking sheet; spread over the baking sheet, using your hands to form a thin layer. Freeze for 5-10 minutes.
  • While dough chills, melt remaining chocolate chips in a double boiler or microwave.
  • Pour melted chocolate across the dough. Top with Maldon salt, if desired. Return to freezer for at least 1 hour.
  • Cut into pieces and enjoy!

    I was excited about the simplicity, but disappointed to see the ingredients were items most people don’t have and things that are very expensive.

      Agree, disappointing. I don’t own these ingredients or plan to buy them either. But this wasn’t meant as a regular BCP recipe, it’s from Rorie’s new cookbook (being promoted here) which uses all these more healthful subs in cooking and baking.
      I’d love a non-healthy version though! This looks delicious.

        You can find plenty of recipes online for regular edible cookie dough. This one is meant to be high protein and better for you. Exactly the kind of recipe lots of health concious people want. Thank you BCP for choosing this recipe to feature- now I want the cookbook!

    this looks yum! brilliant to make edible cookie dough with almond flour!! (you can get it at Walmart for under $10 for 2 lb)

    could it work with spelt flour or is the almond flour needed for texture?
    any ideas?

      Almond flour can be eaten raw vs spelt four ppl wouldnt eat without baking.

    Is there any almond flour alternative that would work to make this nut free?

    As someone who is off white flour and sugar I’m excited to try this. I need more easy to make recipes. The chocolate chips always trip me up though- either I have to make homemade chocolate (which I have done) or use nuts instead
