Grilled Chicken Skewers

These are the chicken skewers your kids will actually eat–with a crowd-pleasing marinade that appeals to all tastebuds.

This grilled chicken recipe comes together quickly, with ingredients you already have on hand. 

Start by soaking your skewers–this step will prevent them from burning once they hit the grill. We like using smaller-sized skewers–they look nicer and are easier and more appealing to eat (kids tend to like them better too). 

Like with our veggies, we’re skipping the bowls this summer and marinating in a Ziploc. No mess, no fuss. Add the marinade ingredients first, mix, then add the chicken.

Add the chicken to the skewers.

It’s time to grill. Preheat your BBQ to high. Once it’s preheated, add the chicken–they’ll be quick!

 These mini skewers will cook in about 3 minutes per side. You should see nice grill marks on each side.

They’ll likely be grabbed straight from the grill. 

But if you do get a chance to plate them,

add a salad, an ear of corn or our basket of grilled veggies and dinner is simple, satisfying and served!

Grilled Chicken Skewers

Ingredients

  • 1 ½ lbs chicken breast cubed
  • 2 tbsp mayonnaise
  • 2 tbsp olive oil
  • 3 tbsp orange juice
  • 1 tbsp soy sauce
  • 1 tbsp mustard
  • 1 tbsp honey
  • 1 tbsp chicken consomme
  • 6 frozen garlic cubes
  • 2 tbsp dried parsley flakes
  • salt and pepper

Instructions

  • In a Ziploc, combine all marinade ingredients. Mix to combine.
  • Add chicken, mix and marinate for 30 minutes.
  • Add chicken to skewers.
  • Preheat your BBQ on high. Add chicken and grill for about 3  minutes on each side until cooked through.
