Keep two ingredients on hand and have a crowd pleasing dessert ready in (almost) no time.
Who doesn’t love a dessert that oozes extra chocolate?? These molten cookies are so easy to prepare that you can hand off the task to a young child.
Preheat your oven to 350F. Start with 24 frozen cookie dough balls – we like to buy Kineret brand, but you could make your own if you’d like. Make sure to grease your muffin pan well.
Place partially thawed dough in the 12 wells of a greased muffin pan. Press the dough to take the shape of the bottom of the muffin “cup”.
Then add a square of good quality baking chocolate on top of the dough.
(If you don’t have good baking chocolate, you can use chocolate chips. Simply place in a Ziploc freezer bag and immerse the bag in hot water. The chocolate will melt in minutes.
Snip a hole in the back and squeeze some melted chocolate onto the center of the cookie dough.)
Take one of the remaining dough balls
and flatten it between the palms of your hands.
Place the flattened dough on top of the chocolate square. Repeat until all muffin cups are filled.
Bake for 15 minutes. Allow to cool for a few minute and remove from the muffin pan using a knife to pull the cookies out, if needed.
Serve warm, with or without ice cream. (For Shabbos, these stay perfectly molten when placed on top of a blech or in a warming drawer.)

I do this in the mini graham cracker pie crusts. Place a piece of Rosemarie chocolate then 2 chocolate chip cookie balls on top and then bake till golden. I get asked for the recipe every time I serve it.
