So good. So rich and satisfying. So elegant. And so, so easy to make. I’ve been making this on repeat.
Many years ago, my sister-in-law made this dessert while I was visiting her in Israel. I loved it so much…the tart passion fruit so perfectly balanced the rich mousse below it. And then there was the surprise crunch at the bottom. (You can’t even see the crumbs because the mousse covers them over…)
There was just one problem. At the time, passion fruit pulp was not available in the U.S. So, I bought it over there and brought it home with me in my suitcase (looking back, I know now that it’s not legal to bring in fruit from overseas).
But then a few years passed and I wasn’t able to make the dessert. Because you need so much passion fruit, it’s not so cost-effective to start scooping out the fresh passion fruits to get that bit of pulp in each.
Now, this cubed passion fruit by Beleaves appeared in the freezer of my local grocery (and yours, too). We were back in business.
Ok, now we can prep this dessert! It’s rich, so small portions is perfectly good, and you will need some kind of small dessert cup or dish. Plus–there is so, so few ingredients and it’s so super quick to prep!
All you need is the passion fruit, lotus cookies, non-dairy whipped topping, praline paste, and chocolate. That’s everything.
The bottom layer is just crushed Lotus cookies. If you have a meat mallet, it’s a good time to pull it out now to help you crush those cookies. Step one done.
Then, in a microwave-safe bowl, combine the chocolate, praline paste, and whipped topping. Microwave at 30 second intervals, stirring in between, until smooth. Now your mousse is done.
Add it to a piping bag.
Start assembling. Add a couple of spoons of crumbs to the bottom of each dish,
and then pipe a thin layer of mousse over it. At this point, you can put it into the freezer until you’re ready to serve.
Before serving, add 2 tablespoons of passion fruit to each cup. You just need to let the bag of Beleaves Passion Fruit thaw. There’s nothing else you need to do (no blending!).
Don’t add the passion fruit before freezing because the mousse will take quicker to thaw than the fruit…and we want the passionfruit to be liquidy while the mousse is still cold.
Crunchy cookies, creamy rich mousse, and tart passionfruit. It’s so good together you would never even have been able to guess…until you taste it yourself!
