Chocolate chip cookies, ice cream, and sprinkles are so much better together in this Pesach dessert.
This is the perfect example of two things that are just ok on their own being way more amazing together.
When I’m hosting a lot of people for a meal over Yom Tov, rather than be busy making lots and lots of desserts, I try to focus on serving one amazing dessert. Everyone is usually just as happy, and let’s be honest, they’re full anyway. There’s no need to be overwhelmed with options.
And since Pesach only happens once a year, I can usually repeat my *special* dessert each year and of course no one minds. Or do they even remember, frankly?
For adults, my go-to is light and refreshing. I add some spoons of coulis (the original BCP coulis version and this mango one) on the bottom of the dish, topped with scoops of the iconic grape juice ices, lemon ices, and lemon ice cream. Great quality store-bought sorbets also work. I top the sorbet with a pavlova ring (circle shape) and some chopped fresh fruit and Pesach streusel or granola and ta-da! It’s so delightful and pretty, and really, it’s just components I was making anyway (ices, granola, meringues), pulled beautifully together.
But let’s move onto the kid’s dessert. Because while I’ll plate this item for the adults, for the kids I simply pull out a couple of 9x13s filled with these ice cream sandwiches.
And honestly, the adults end up grabbing them too. I need to make sure to make enough.
There’s something about the cookie and ice cream melded together that’s so good. Especially Pesach chocolate chip cookies…they get very soft when frozen with the ice cream and it’s easy to take a bite out of them together.
My favorite Pesach chocolate chip cookie recipe is this one on Between Carpools.
Simply match up the cookies that are similar in size.

Add a scoop of ice cream (it should be soft enough to scoop, but doesn’t need to be overly soft).

Add the second cookie.

And dip in sprinkles or Non-pareils. Mini chocolate chips is also a good option. If your ice cream is recessed inside the cookie, spoon some sprinkles over, but most of your ice cream should reach the edge once the cookies are sandwiched.

You’ll need to get these to the freezer after making every few cookies so they can firm up again.
Then simply keep frozen until you’re ready to serve. It’s so special and so easy. Yum!
