These are the side dishes you’ll make the most often in the least amount of time.
Did you see the first installment in my 2-ingredient side dishes series last week? If so, you learned all about my desire to cook things are super simple yet delicious nonetheless. Well, here’s the next in the series (and there’s many more to come!)
Roasted French Beans and Grape Tomatoes
Buy the ones in the neat stacks in the bag and you can easily trim a whole handful at a time. Spread them on your baking sheet. Drizzle with olive oil and season with salt, pepper, and crumbled garlic cubes. Toss well. Add a couple of handfuls of tomatoes (on only one side of the pan if you have some tomato haters in your household.) Bake for about 30 minutes, until the edges of the beans are browned and the tomatoes look a bit wilted. Leave the pan on the counter so that the kids can pick from it without ever acknowledging that they’re actually eating green beans.
- French green beans (or green beans. I just prefer the nicely trimmed ones from Costco)
- Grape tomatoes
- Garlic cubes
- Kosher salt
- Black pepper
- Olive oil
