It’s always great to have more versions of your favorites.
Our oven baked hot poppers from Dinner Done is hands down our family’s favorite recipe.
This winter, I changed things up by using a new sauce on the poppers, creating BBQ Sticky Poppers.
Yes, I know that when you find a good recipe that the entire family likes you stick to it. However, when they like it too much, they can start to get bored, and I also get bored of serving the same dinner.
The BBQ Poppers were a hit–it’s no wonder when a recipe is family-friendly, easy, oven-baked, and made with pantry ingredients. You can’t mess with fresh takes on favorites.
Now it was time for one more. My kids love chili lime seasoning on fruit. They sprinkle it on mango, pineapple, and apples. That inspired me to prepare chili lime poppers. I like to toss this chili lime sauce with the chicken when it’s hot. Feel free to use it as a dipping sauce instead for those kids that are less adventurous.
Chili Lime Poppers
Ingredients
Chicken:
- 1½ lb chicken cutlets, cut into 1 inch cubes
- 1 egg
- ½ tsp lemon juice
- ¼ tsp paprika
- ¼ tsp salt
- ¼ tsp garlic powder
- dash black pepper
- 1 cup panko or home-style crumbs
- 2 tbsp oil, divided
- Oil spray
Sauce:
- ¼ cup sweet chili sauce
- 1 tbsp maple syrup
- ½ tsp chili lime seasoning
- 1 tsp lime or lemon juice
Instructions
- Preheat oven to 425ºF.
- In a bowl, combine egg, lemon juice, paprika, salt, garlic powder, and black pepper. Place the cubed chicken into egg mixture, then mix to coat. Let sit 5 minutes.
- Meanwhile, line 2 baking sheets with parchment paper. Place 2 tablespoons oil on each pan and spread around.
- Coat chicken pieces in the crumbs. Lay on prepared sheet pan, making sure there is space around each one. Spray tops of chicken with cooking spray (alternatively you can flip pieces around in the oil, so both sides are coated in a thin layer of oil).
- Bake for 15 minutes until golden at the edges and ready.
- Meanwhile, in a bowl, combine all sauce ingredients. Toss with hot chicken poppers or use it as a dipping sauce.
