This is a baked schnitzel that’s a healthier alternative to the classic fried favorite. What’s our trick for getting it to taste crispy, and just-like-fried chicken? (Seriously — kids will not be able to tell the difference.) Use corn flakes cereal, not corn flake crumbs, for that perfect crunch!

Tastes-Like-Fried Corn Flake Schnitzel from Dinner Done 2

Ingredients

  • 1 ½ lb skinless, boneless chicken breasts, thinly sliced
  • 1 egg
  • 2 Tbsp mayonnaise
  • 1 Tbsp sweet chili sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp oil
  • 4 cups corn flakes cereal

Instructions

  • In a bowl, combine chicken, egg, mayonnaise, sweet chili sauce, and soy sauce. Marinate for at least 20 minutes or up to overnight in the refrigerator.
  • Preheat oven to 425°F. Line a baking sheet with parchment paper; brush with oil.
  • Crush corn flakes very well with your hands until they reduce from 4 cups to 1½ cups. Add crushed corn flakes to a shallow dish.
  • Remove chicken from marinade; coat in crumbs. Place on prepared baking sheet.
  • Spray tops of schnitzel very well with nonstick cooking spray or brush with additional oil. Bake for 15-20 minutes, until crispy (time will depend on the thickness of the chicken).

      Amazing amazing recipe, as usual! It was such a hit- even for the picky eaters. I used frosted flakes instead bec I didn’t have regular corn flakes but so so tasty! Only thing I can think of changing is maybe flipping over so that both sides get extra crispy. Thank you so much, between carpool, for another recipe that doesnt take hours and hours to prep for!

    Yes crazy ad situation!!!! I have a great ad blocker, never see any ads on other sites but this is crazy! And worst of all is they are not for frum companies! Things I do not want to see at all.

    I called my filter company because I thought the pop up ads were because something was wrong with the filter. They said that between carpools recently made a change and that is why the ads are coming, It seems they are working on a solution.

    Agree about the ads. They put so much work into the beautiful pictures and aesthetic of the site, and it’s completely taken over by ads for clothing and Nespresso and Lego!!!
    Between carpools team—the ads are showing up within the recipe. In the instructions, Videos for kohls etc!! Ads in the comment section between comments lol!!

    Omg this new cookbook is AWESOME!!!!!!!!! I pre ordered and got it today and I’m so so excited to try all these recipes my mouth is literally drooling!!! Such heaven stuff and most of them really easy to make and I’m so excited to try them! I just can’t figure out which recipe to make for dinner tomorrow, I just want them all!!! Thank you between carpools! You seriously outdid yourselves!!!!

      For all those wondering, I froze the nuggets fully prepped and breaded and they came out just as good! Slightly less crispy but still really juicy with a good crunch around the edges. Now I need to get the cookbook so I can enjoy more recipes!

    Ads are so terribly distracting, and sometimes I’m not sure if it’s the ad, or the actual post. I’ve been getting a terrible ad , I try to quickly close it because it’s inappropriate. My phone has Machane kodesh plus more filters. This is the only site this happens with.

    So interesting cuz I was about o email the between carpools team. The ads are so so annoying. I get extremely inappropriate ads each time I come onto this site, from places and advertisers that I’ve never visited or heard of.. so super annoying.. it’s starting to look like a spammy website… I can’t let my kids get onto this site by mistake – whilst kosher.com does not have this issue at all… my kids love recipe hunting, and I’ll have to block this site entirely if this ad nonsense continues, which is a real pity…

    Wow this recipe hit the spot! First of all my husband surprised me and pre ordered the cookbook for me and I was so excited to receive it!! Every single recipe and page is awesome- so delicious and my mouth was watering while looking thru the cookbook ! I can’t wait to make it all!! I made this chicken today for dinner and woah! It was a hit! Even my pickiest eater who claims she doesn’t like chicken ate three pieces!!! So yeah, it will be definitely part of my new dinners weekly from now on! I made the dip/dressing recommended in the cookbook that goes with it and it was delicious! Thank you between carpools! These recipes are amazing!!!!!

    Great recipe- thank you! Crushing the corn flakes is a bit time and “mind” consuming and it makes it a not-so-easy-smeezy- recipe. So I crush a whole box at a time and have some ready for next week time! Somehow a whole box takes only a little longer than half box, it’s not double the time.

    I thought this chicken would be a little dry, but just tried it with the minimum marinating time (20 min) and it was FANTASTIC and so moist! Definitely a hit!!
