Crunchy Broccoli Slaw with Kale

This is the feel-good salad with barely any chopping required.

If you see kosher broccoli slaw (made from the broccoli stems only) in your local supermarkets, this is what you should prepare with it.

Honestly, I never was compelled to buy broccoli slaw because what would I do with it? I like my cole slaw the regular way, with cabbage. And I didn’t want to put mayo on yet another salad. 

I’m not sure if this qualifies as a salad, or rather a slaw, but no matter what you call it, it will be a new favorite. I’ve been making it on repeat lately.

Maybe because it’s just so easy to prep and there’s barely anything to chop.  It’s just equal amount of broccoli slaw, red cabbage, and kale. There’s very little thinking required.

Or maybe because it’s so genuinely healthy.

And there’s no mayo in this slaw. Just the simplest lemon vinaigrette that whisks together in seconds.

We also like this with pomegranate seeds! The flavors of this salad are even better when made a couple of hours ahead, so go ahead and toss. There’s no need to wait.

Crunchy Broccoli Slaw with Kale

Ingredients

  • 2 cups broccoli slaw
  • 2 cups kale, finely chopped
  • 2 cups red cabbage
  • fresh parsley
  • 2 tbsp sunflower seeds
  • 2 tbsp sliced almonds
  • Pomegranate seeds, optional

Dressing:

  • 2 tbsp olive oil
  • cup lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • ½ tsp salt

Instructions

  • Combine salad ingredients in a bowl (the only ingredient that needs some chopping is the kale, but that is quick).
  • Whisk together dressing ingredients.
  • Toss to combine.

    Oh wow that looks amazing! Just one thing why is mayo less healthy than oil, it’s just oil and eggs

      I don’t think one is less or more healthy vs. the other. This is just lighter feeling than mayo-based slaws, it’s just a different type/taste.

    FYI of course mayo is less healthy than a healthy oil just check the ingredients list! It’s heavily processed and full of chemicals. Unless you make it yourself or buy it from a health food store that is.. that lighter feeling .. theres a reason why
