Pomegranates are delicious – and affordable – in the fall and winter. But you can enjoy them any time.
If you shop in Costco, you probably have noticed that after Rosh Hashanah (of course), they sell gorgeous pomegranates by the case. Time it right and the price is beautiful, too. But who needs 6-12 pomegranates all at once?

But did you know that you can freeze them? My neighbor told me she had an extra couple of pomegranates after Rosh Hashanah and didn’t want them to go to waste. So she seeded them and froze the arils. And when she pulled them out the following shabbos to top a dessert, they were perfect!

So we tested them here at Between Carpools and we agreed –

– we’re stocking our freezers now while the pomegranates are sweet and juicy.

Just spread your pomegranate arils (or pomegranate seeds, if you prefer) on a parchment lined sheet pan

and flash freeze for an hour or two.

Then transfer the frozen seeds to a paper towel lined container and freeze.

It’ll keep for months in the freezer so go ahead and buy that Costco sized case!
