
Preheat the oven and enjoy these Oatmeal Squares alongside your hot cocoa… with no mess to clean up after!
If there is one thing we all need, it’s super easy recipes. The type a kid could pull together. Whenever I need such recipes, I call an old friend of mine, Miriam G., who shared this recipe (which she got them from another friend…)
- 2 cups oats
- 1 cup Wonder Mills whole wheat flour
- ½ cup sugar
- ½ cup brown sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ cup chocolate chips
- 1 tablespoon vanilla sugar or 1 teaspoon vanilla extract
- 2 eggs
- ½ cup oil
- Preheat oven to 350ºF.
- In a bowl, or directly in a greased 9- x 13-inch baking pan, mix dry ingredients first with a fork, then mix in the 2 wet ingredients.
- Bake for 25 minutes. Cut into squares while warm. Let cool and separate.

Disclaimer: While 9×13 pans are a great convenient option, all of the recipes featured in this series can also be made in a non-disposable (i.e. glass, ceramic, or metal) baking pan (cooking/baking times may be a little shorter).

No, it doesn’t stick to a disposable pan. If using non disposable pan, then you should line it.

Can I use any type of whole wheat flour? Even white whole wheat flour?

Can i use instant oats?
Not a fan 🙁 Lots of good recipes on this site but these did not go over well. Tried twice once with white flour, once with whole wheat.
These have become a family favorite! I reduce the sugar by 1/3. Our favorite variation is with 1/2 cup white chocolate chips, and 1/2 cup no sugar added dried cranberries. The texture comes out better if you put the disposable pan on a heavy aluminum one in the oven.
The oatmeal squares are delicious. Unfortunately, I counted the calories 3 times just to be sure, and following the recipe exactly, and cutting them into 24 squares yields each square at 140 calories, almost double the 80 that you put them at.

What are the amounts of sugar substitutes I can do and what’s a good alternative
Have made these successfully a few times already. Used applesauce (unsweetened) instead of the oil, added sunflower seeds and cut down the sugar. They went literally in five minutes. Winner. Thank you!
Can I use quick oats?
Yes.
We love these!! They totally are a staple on my regular baking rotation. I like to try out healthier substitutions when I bake, so I wanted to share what substitutions I found to work: I have swapped out the flour for regular whole wheat and even spelt flour and both work perfectly. I have not found that applesauce replaces the oil well – the texture is off (the squares sort of stay wet and sticky.) instead, I use a healthier oil, like avocado oil, with perfect results. I also add in 1/2 T. cinnamon and my family can never get enough.
Any suggestions for what I can use to replace the eggs in this recipe? TIA

I used raisins (just to differentiate them from chocolate chip bars) which I soaked in hot water to soften and added 1/4 teaspoon cinnamon to complement the raisins and they were also delicious.
Where can you buy that flour?
I decided to experiment making it GF and I decided instead of my go to almond flour I used peanut flour I have around instead of the cup of regular flour and it turned out amazing! Great peanuty flavor. I also did 3/8 cup of white sugar and brown instead of 1/2 cup each.
These look great! Did anyone use any healthier sugars that worked well? Like honey/maple syrup/coconut sugar..?
I’ve made this 2x- doubled the mix ins with raisins, nuts and chocolate and added a nice shake of cinnamon. Gone before the next day!
