When we came across this recipe from Tammy Israel, we knew we had to try it.
Last year, Tammy shared this recipe over at @saladsnsweets. It seemed easy enough for a child to make, so I had my 10-year-old daughter give it a go. They were absolutely the best Pesach cookies we’d ever tried!!

I reached out to Tammy and asked her if we could share the recipe here on Between Carpools. She graciously agreed, so I photographed them right then and there. Add these cookies to your list – they’re a must!
Gluten Free Chocolate Chunk Cookies for Pesach
Ingredients
- 1 cup oil
- 1 cup brown sugar
- ½ cup sugar
- 3 eggs
- 2 tsp vanilla extract
- 5 cups almond flour
- 1½ tsp baking soda
- 1 tsp kosher salt
- 1 – 2 cups chopped bittersweet chocolate (Tammy used a whole 10.5oz Alprose chocolate bar. You can also use chocolate chips.)
Instructions
- In a bowl, using a wooden spoon or spatula, mix oil with sugars and eggs until smooth. Add vanilla. Add almond flour, baking soda and salt. Once smooth, add in chocolate chunks.
- Scoop into 1.5 tbsp sized balls. Roll and flatten slightly.
- Bake at 350℉ for 8 minutes.

If i can’t get koshe le pessach brown sugar, can I substitute with regular sugar?

I’m pretty sure Domino brown sugar is fine for Pesach.
Hi! Most light brown Sugar is kosher for Passover. But in the event that you can’t find you can use all white. The texture will change a little but will still be great!
I often sub white sugar and honey/ corn syrup (rest of the year)/ any other sugary syrup i have to hand for brown sugar – i actually sometimes do it on purpose even when i have brown sugar because it adds a nice texture. to sub 1 cup i do around 3/4 of a cup white sugar and the rest whatever syrup i have.
These look really good! Is there any way to make them nut free?
