Grilling Vegetables For Your BBQ Is Easy!

You simply need the right grill basket to easily add that veggie side dish to your BBQ menu.

You already know what’s on your menu for your next BBQ, because it’s usually the same. This kid likes the hot dogs or burgers, the girls like the grilled chicken that has that yummy marinade, the older boys want a steak, if possible. 

But what about the side dish? Sure, this purple slaw is a barbeque favorite, but, sometimes, we crave those grilled veggies. But, without all the tedious work please. So here you go: we have the answer. Grilled veggies in a basket. 

Start by ordering and toiveling this basket, you will be glad to own it when the next BBQ comes around. 

Peppers, red onion, mushrooms, eggplant, zucchini, garlic powder and squeeze bottles of olive oil and soy sauce, on a metal baking sheet.

Here we used one red pepper, one yellow pepper, one orange pepper, one green pepper, one small eggplant, one zucchini, one red onion, and a few mushrooms.

Dice up all the veggies, peel and all. Large chunks, any shape will do. This is meant to be quick prep; there’s no need to fuss too much. Then, throw them into a Ziploc bag to marinate.

The marinade is easy and the measurements are more of a suggestion, if anything. Adjust according to the quantity of vegetables you are actually using. 

At this point you can marinade all day or only a few minutes, whatever works best for you.

When you are ready to grill, start the veggies first. They need a good headstart. Preheat the grill to medium-low. Place the basket and veggies directly over the fire.

They’ll take awhile–about 30 minutes, mixing in between. We grilled this large bag in batches since we did not want to overcrowd the basket. You want to be able to get nice, charred edges.

Keep stirring from time to time, grilling over a low flame.

When ready to serve, you can remove the whole basket and bring it to the table but lift it very carefully using oven mitts–it gets really hot! Place it on a plate or baking sheet to catch drips.

Grilled Vegetables in a Basket

Ingredients

  • 1 red pepper diced into large pieces
  • 1 orange pepper diced into large pieces
  • 1 yellow pepper diced into large pieces
  • 1 green pepper diced into large pieces
  • 1 small eggplant unpeeled and diced into large pieces
  • 1 zucchini unpeeled and diced into large pieces
  • 1 red onion peeled and diced into large pieces
  • 1 handful of mushrooms cut in half
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tsp garlic powder

Instructions

  • Add all ingredients to a large Ziploc bag. Marinate for a few minutes or up to 24 hours.
  • Preheat grill to medium-low. Lower heat and add basket and veggies directly over the fire. Cook at least 30 minutes (depending on the amount of veggies), stirring occasionally.
  • Remove basket carefully from grill (it’s hot!) when ready to serve.
