Charred wraps, creamy chicken, and crunchy cucumbers make this a family-friendly summer dinner everyone, from kids to adults, will love.
Hands down, all my kids will eat cucumbers if I add some lemon juice, salt, and pepper. They will also pretty much eat anything I serve them in a charred wheat wrap. And so this 20 minute dinner was born.
As much as I love summer recipes that are all on a sheet pan popped in the oven (see One pan Chicken Nuggets and Fries, 9×13 Chicken Poppers, the flavor you get from charred wraps and sautéed onions just doesn’t happen in the oven. However, like all the other summer dinner ideas, this comes together in under 30 minutes (including prep, cooking) and is a complete dinner.

If you do want to add something else to this meal, this would go great with our Corn Riblets.

This recipe uses 1 lb of chicken which makes 6-7 wraps. I don’t recommend doubling it in the same skillet (unless your pan is 14 inches) since the onions and chicken won’t caramelize as well.

Char wraps over an open flame on both sides.

Toss cucumbers with seasoning.

Fill wraps with chicken. Top with cucumbers.

Eat and enjoy!
Creamy Chicken Tacos
Ingredients
- 6-7 6" wheat wraps
- 1 lb chicken breast, cut into thin small strips
- 1 medium red onion, Frenched
- 2-3 tbsp oil
- 2 garlic cloves, crushed (or 2 cubes)
- 1 tsp paprika
- 2 tsp brown sugar
- ¼ tsp coarse black pepper
- 1 tsp sea or kosher salt
- ¼ tsp chili powder (optional)
- 2 tbsp mayonnaise
- 2 tsp ketchup
Cucumbers:
- 3 Persian cucumbers, thinly sliced into half moons
- 1½ tbsp lemon juice
- ⅓ – ½ tsp salt
- dash pepper
Instructions
- In a large skillet sauté onion in oil for 7-8 minutes on medium to high heat. Add garlic and sauté for 30 seconds.
- Move onions and garlic to the side of the skillet. Add chicken, lower heat to medium, and let cook for 5 minutes until mostly white. Stir occasionally. Add seasoning, stirring in the spices. Cook for 1 more minute so the flavor cooks into the chicken. Add mayo and ketchup. Cook, stirring occasionally, for 5-7 minutes or until cooked through.
- Char wraps over an open flame on both sides.
- Toss cucumbers with seasoning.
- Fill wraps with chicken. Top with cucumbers. Eat and enjoy!

Directly on the stove using tongs to flip it over. Takes a few seconds per side.

I leave out the onion and ketchup and only put in a dash of chili (based on family preferences). It’s a family fave! I gave some to my hispanic cleaning help and she was raving about it. It’s a great option for dinner when you’re short on time; it takes only 15 minutes to make when you leave out the onion!
Can’t wait to try, I think I’ll use cole slaw salad instead of pickles.
