Move over Muddy Buddies, there’s a new kid on the block.
My love for desserts doesn’t end with just edible cookie dough! We’re always coming up with quick and easy recipes and we love to share them!
We love Muddy Buddies here but we needed something new to change it up and we came up with S’mores Chex!
You won’t need a pot for this one, just a microwave and a large baking sheet (so it’s easy to spread out the Chex).
Just microwave your jar of lotus spread and coat the Chex.
Microwave your small jar of fluff and coat.
Finally, melt your chocolate chips and coat.
These won’t need powdered sugar, just put them in the freezer for a bit to harden.
Super easy, so good and addictive! Enjoy!
S’mores Chex
Ingredients
- 1 box Chex (any kind you like)
- 1 jar lotus spread
- 1 small jar marshmallow fluff
- 1½ cups chocolate chips
Instructions
- On a baking sheet, spread out the Chex.
- Melt the jar of lotus in the microwave (Imp. Remember to remove the foil seal before microwaving.) for about 40 seconds, stir and then pour over the Chex. Mix to coat well.
- Melt the jar of marshmallow fluff in the microwave for about 40 seconds, stir and then pour over the coated Chex. Mix to coat well.
- Melt the chocolate chips, and coat the Chex. Mix well.
- Freeze the coated Chex for at least half an hour.
- Remove from freezer, break up into pieces and divide within resealable bags for convenient grabbing. Store in the refrigerator or freezer.

I would put the cereal into a big ziplock bag, pour the other ingredients directly onto the bag, close the bag and smush with my hands until throughly mixed. It’s easier to mix that way and you’re left with absolutely nothing to clean!

I’ve definitely done with either! The smaller box will result in a much more well coated batch, but either way is great! I use whatever I have in the pantry!

For out of towners- Walmart has cookie butter that tastes like lotus butter! It is OU-D but I don’t think there is actual Dairy in it

You can heat the jars in a small pot of boiling water. Same with the chocolate in a ziplock!

Homemade lotus butter (pareve/dairy options):
2 cup cookie crumbs (crush vanilla/sugar cookies/lotus cookies in a food processor)
put crumbs in a bowl, mix in the following (by hand)
2 Tablespoons melted margarine/butter
2 Tablespoons brown sugar
1/3 cup nondairy whip topping or creamer, defrosted/heavy cream
1/4 teaspoon cinnamon and/or nutmeg, to taste
This recipe doubles and triples easily!
It should keep nicely for up to 2 weeks in an airtight container in the fridge.

I haven’t tried it in this recipe but I can tell you what I’ve found when making rice krispie treats with melted marshmallows vs fluff.
Marshmallows have gelation in them so they’ll set better but won’t stay as soft and creamy as when made with fluff. Marshmallows are also coated with starch (so they won’t stick to each other) so when melted and set they end up slightly more dry and grainy. It all depends on what you like better but I like it much better with fluff!

This recipe was pretty simple to make and my family loved it! They said it tastes better than Muddy buddies. I tried this recipe before but the Marshmallow fluff exploded in the microwave. This time I put it in for a few seconds at a time and that worked much better!

These are so yummy!! Served it in Shabbos and everyone loved!! I also drizzled the melted chocolate on top instead of mixing it in… thanks for a great recipe ! I don’t think I can go back to making the original muddy buddies again!
