Muddy Buddies S’mores Chex

If You Love Muddy Buddies, You’ll Love S’mores Chex Even More

Move over Muddy Buddies, there’s a new kid on the block.

My love for desserts doesn’t end with just edible cookie dough! We’re always coming up with quick and easy recipes and we love to share them!
We love Muddy Buddies here but we needed something new to change it up and we came up with S’mores Chex!

You won’t need a pot for this one, just a microwave and a large baking sheet (so it’s easy to spread out the Chex).

Pouring lotus spread over Chex.

Just microwave your jar of lotus spread and coat the Chex.

Marshmallow fluff over Chex.

Microwave your small jar of fluff and coat.

Pouring melted chocolate over Chex with lotus spread and marshmallow fluff.

Finally, melt your chocolate chips and coat.

Mixing melted lotus spread, marshmallow fluff and chocolate with Chex to coat well.

These won’t need powdered sugar, just put them in the freezer for a bit to harden.

Super easy, so good and addictive! Enjoy!

I would put the cereal into a big ziplock bag, pour the other ingredients directly onto the bag, close the bag and smush with my hands until throughly mixed. It’s easier to mix that way and you’re left with absolutely nothing to clean!

1 box of Chex is 12 oz. or 18 oz.?

    1. Shana Avatar

I’ve definitely done with either! The smaller box will result in a much more well coated batch, but either way is great! I use whatever I have in the pantry!

Any subs for lotus butter (not peanut butter please!) for out of towners? That’s not something we can buy here…

For out of towners- Walmart has cookie butter that tastes like lotus butter! It is OU-D but I don’t think there is actual Dairy in it
It’s called “Great Value Speculoos Cookie Butter:”

    What if I don’t have a microwave?

    1. Shana Avatar

You can heat the jars in a small pot of boiling water. Same with the chocolate in a ziplock!

I made this recipe and can’t wait to use it for the smores Chex!

    Homemade lotus butter (pareve/dairy options):
2 cup cookie crumbs (crush vanilla/sugar cookies/lotus cookies in a food processor)
put crumbs in a bowl, mix in the following (by hand)
    2 Tablespoons melted margarine/butter
    2 Tablespoons brown sugar
1/3 cup nondairy whip topping or creamer, defrosted/heavy cream
1/4 teaspoon cinnamon and/or nutmeg, to taste

This recipe doubles and triples easily!
It should keep nicely for up to 2 weeks in an airtight container in the fridge.

Would Melted marshmallows work instead of the fluff?

I haven’t tried it in this recipe but I can tell you what I’ve found when making rice krispie treats with melted marshmallows vs fluff.
Marshmallows have gelation in them so they’ll set better but won’t stay as soft and creamy as when made with fluff. Marshmallows are also coated with starch (so they won’t stick to each other) so when melted and set they end up slightly more dry and grainy. It all depends on what you like better but I like it much better with fluff!

This recipe was pretty simple to make and my family loved it! They said it tastes better than Muddy buddies. I tried this recipe before but the Marshmallow fluff exploded in the microwave. This time I put it in for a few seconds at a time and that worked much better!

These are so yummy!! Served it in Shabbos and everyone loved!! I also drizzled the melted chocolate on top instead of mixing it in… thanks for a great recipe ! I don’t think I can go back to making the original muddy buddies again!

Can I make this in the oven, similar to the 9×13 muddy buddies?

Such a hit! The store only had crunchy lotus butter-yum! My grandkids loved it. My only issue was that the chocolate chips wouldn’t melt- I had wanted to drizzle. So I glopped it on and the stuck pan in oven for 5 min and then mixed. Next time, and there will be one!- I will try melting a bar. If I use chips I will dot them on, then put in oven and mix.

Just made these again I don’t know why I didn’t think of this before. I added the chocolate chips before I poured the hot marshmallow fluff on and then I mixed everything together and the chocolate melted. Such a treat!!
